Interstellar is another great central Texas bbq spot that you should visit. The bbq competition is starting to become quite crowded in Austin. Interstellar does sell out everyday so you have to go during lunch hours if you wait until dinner time it will be to late. Everything we had I was really impressed with besides the free beans. The beans were more of chili beans. We got the smoked Mac and cheese and scalloped potatoes, both standouts in my opinion. For meat we got brisket, pork ribs, sausage, and my personal favorite the peach tea pork belly. I also got to try some of the turkey. The brisket had some really great flavor to it and Texas knows how to cook brisket. I have noticed pork belly is starting to become more popular and a peach tea glaze on the pork belly is something I really did enjoy. The pork ribs were super tender and the meat fell right off the bone. We went on a Sunday morning and got in line about an hour before the restaurant opens. The line moves fairly quickly and the staff was super friendly. If you are in the Austin area give this place a visit it is a little ways out from downtown so you would need a car to get there.

Interstellar BBQ has some fantastic BBQ and like to add a twist. I was impressed with everything we had (including the free beans). The sides were all stars in there own way- from the silky cheesy Mac and cheese to the buttery scalloped potatoes. The meat itself was all cooked great. I would say the brisket was the stand out. The pork belly was cooked awesome but the glaze lacked a big flavor like I was expecting. Still tasty though. The staff was incredible and they move the line fast. On a week day, I would should up 30 min before opening to be in and out fairly quick.

Our relatives from TN said it's the best bbq they've ever had! Just ask Elon Musk. Anything with a rocket on it has his stamp of approval. You can grab drinks in the bar area to have while in line (doors to the far right and bar to the far right). Enjoyed Topo Chico. It's a stand in line, order at the counter, then sit type of place. Plenty of seating. Indoor and outdoor with shade. Fans while in line. MHO: Amazing brisket...melt in your mouth juicy. The ribs are so good. Be sure to get there at opening or before to get meat before it's gone. On Sunday's they have unique dishes if you want to try something new. GF & DF meat except for the turkey (beer brine). The tomato is zucchini salad & jalapeno slaw are GF & DF. Tried the melon Fresca and it was refreshing! Many thanks to the awesome staff! Great experience.

Just wait in the line. Holy Cow it's worth it. I have been stoked to try this place out ever since I moved to Austin. It is closer to Cedar Park so it is a solid 30 to 45 minutes from downtown Austin depending on traffic and it opens at 11am. I would suggest arriving before 10:30am as the line doubled very quickly after 10:40am. I had about a 1.5 hour wait arriving closer to 10:20am and finally got my food closer to 11:45am. My Must Tries * The Sliced Brisket... dear god it was so good. * The FREE BBQ beans... Very Smokey and slightly spicy near the front. Super bold and meaty. * The Mac & Gouda... I'm usually more of a baked Mac and Cheese kind of guy but this one knocked me out the park. The crumbles on top and the cheesy, thick texture was to die for. My 'Consider Again' Tries * The Peach Tea Glazed Pork Belly... probably a little controversial but I thought this lacked flavor. It was not necessarily sweet, nor savory, and I felt generally did not have much flavor. I've heard nothing but good things about this though so going to chalk this one up as a bad day to get it. * Smoked Scallop Potatoes... they were good but didn't touch the beans and Mac & cheese. Solid third choice if you don't want one of the first two. My 'Nah I'll Pass' * Beef Kielbasa... at this point in my life, I just need to recognize that I'm not a big sausage fan. Very gritty and lacked depth of flavor. * Peaches & Cream Rice Pudding... Wasn't impressed. Not deeply sweet and left me wanting to just get a peach cobbler instead. Overall Experience The food is incredible and worth the wait. The atmosphere seems more like small town vibes and I'm all about it. And with the sandwiches, it makes what could be a $70 tab for 2 closer to $30 or $40 including sides and dessert. Let me know what you think!!

The pork belly here is legendary for a reason. You must try it, or you're cheating yourself. I'm not even a big pork fan, and this won me over. The brisket is good as are the sausage links. But the real star is the pork belly. It's a shock to me as a brisket lover, but I have to tell the truth. If you get there before it opens (an hour or so) you have a good chance of being first in line or near first. Worth the wait!

Get there early! This place opens at 11 am. We arrived at 10:15 am and there was already a line. They do try to be accommodating, a server will take your drink order while you wait outside which is nice if you didn't come prepared. Once it opened, it took us around 30 minutes to finally get to the counter to order our food. The employees are friendly and don't rush you to answer questions. They offer beans as a side for free which have a little kick and chunks of brisket in them. We ordered more than enough for two people so we had plenty to take home. As for the sides, the scalloped potatoes and smoked Gouda Mac and cheese were divine. In terms of meats, the brisket, peach glazed pork belly, and ribs were to die for. The only one I didn't particularly care for was the polish sausage. When you think of the amount of people in line and the amount of seating available, this is place is on the smaller side because it is so popular. However, people are efficient at eating their meals and clearing their space so the next patron can enjoy theirs as well. If you're eating in, remember to keep that in mind.

We drove up to Austin from Houston on a Saturday morning. We arrived 15 minutes before opening and waited in line for approximately 2 hours before we got to the counter to order our lunch. The good stuff: food taste overall was spectacular. I loved the brisket, beef ribs, sausage, and the beans were quite special. The staff was really nice and I was impressed with the service. They aren't stingy with the to-go containers. The indoor seating is limited but is air conditioned which is crucial after a 2-hour wait outside in the heat. To make the heat bearable, they provide free water and beer in a cooler (not sure if this occurs all the time). Also the line is mostly in the shade which is a big deal on hot, sunny summer days. The reason I couldn't give it 5 stars: the wait is just too long. I need to be completely blown away to make it worth waiting outside for 2 hours, and it just didn't cross that threshold for me. They have 1 carver and 1 cashier, so the operational flow is slow. The line barely moves unlike the lines at Disney World (which are ridiculously long but at least they're constantly moving). My recommendation for adults - wait in line and see if it's worth the wait. For adults with young children - it will be a painful experience. Bring entertainment and play games while in line to make the time pass. And if you can't handle the heat, don't try this in the summer. Our meal for 4 was $150 so definitely on the pricey side, but we also walked away with a lot of leftovers. I won't go back because very few restaurants are worth a 2 hour wait for me, but I do not regret trying Interstellar BBQ as the food and staff were great.

Interstellar is a hidden jewel....hidden in plain sight in a nondescript strip. What lies inside is pure BBQ heaven. I've never been disappointed with anything I've tried, but my favorites: - Brisket, end part (I like bark on my brisket!) - Brisket taco (if they have it) - Burnt ends - Frito pie sausage - Smoked Scalloped potatoes - Gouda mac & cheese - Cornbread (if they have it) - Both BBQ sauces are great too...but the brisket doesn't really need any sauce, it's perfect as it is on your plate. The staff is friendly. The iced tea is decent. The large tables great for sharing with a group or with new friends. Pro Tip: the line can be long, so go on a Wednesday and get there by 10:30 am.
